What you need

tsp active dry yeast

cup all purpose flour

tbsp sugar

cup bread flour

tsp salt

head romaine lettuce

lb ground beef

onion

tbsp unsalted butter

tomato

pepper
cup warm water

avocado

hamburger bun
egg

oz white cheddar

tsp fine sea salt

fl oz aioli

dill pickle
Instructions
1: In a small bowl combine warm water, milk, yeast, and sugar. Set aside and wait 10 minutes until the mixture is foamy. 2: In a separate small bowl, beat 1 egg and set aside. 3: In a large bowl, whisk flours with salt. 4: Add dry ingredients to a stand mixer and add butter, mix until it makes crumbs. 5: Add the yeast mixture and beaten egg, mix until dough forms. 6: Place dough onto a clean surface and knead until smooth and elastic, about 8 to 10 minutes. 7: Shape dough into a ball and place it back into the bowl. Cover with plastic wrap and let rise until doubled in size (about 1 hour). 8: Separate dough into 8 equal parts and roll each into a ball, placing them on a baking sheet lined with parchment paper. 9: Cover loosely with a clean kitchen towel and let rise for 1 hour. 10: Preheat the oven to 410° with a baking pan of water on the floor. 11: Beat the remaining egg with 1 tablespoon water and brush on top of buns. 12: Bake buns on the center rack for 15 minutes until golden brown, turning halfway. 13: Caramelize onions and slice the tomato. 14: Season the ground beef with salt and pepper, smash and cook until crispy. 15: Add cheese and let melt before removing from the pan. 16: Toast the inside of the buns. 17: Assemble the burger with sauce, lettuce, tomato, beef patty, onions, pickles, and avocado.
