tbsp tomato paste

tbsp water

oz parmesan cheese
tsp italian seasoning

tbsp olive oil

tsp fine sea salt
cup flour

Instructions
1: Add flour and salt to a large bowl and whisk together. 2: Dig a well in the center of the flour and add eggs and egg yolks. 3: With a fork, beat the eggs and mix in the surrounding flour. 4: When about half of the flour has been added, use fingers to finish mixing the dough. 5: If needed, add water to absorb all the flour. 6: Once a nice ball forms, knead the dough on a floured surface for 4-5 minutes. 7: Wrap the dough in plastic and let sit at room temperature for 30 minutes. 8: Cut dough into fourths and wrap unused pieces. 9: Use a pasta machine to create desired type of pasta and lightly flour to prevent sticking. 10: Boil water in a large pot, add salt, and cook pasta for about 4 minutes until al dente. 11: In a skillet over medium-high heat, add olive oil and cook sausage until crispy; set aside. 12: In the same skillet, add butter, garlic, and shallot and sauté for 1 minute. 13: Add tomato paste, tomato sauce, and cream, stirring and cooking for 5 minutes until the sauce thickens. 14: Season with Italian seasoning, salt, and pepper, and add sugar if needed. 15: Add cooked pasta and sausage to the sauce, serve with Parmesan cheese.View original recipe
