Instructions
1: Preheat oven to 425°F. 2: Add all ingredients, except for salmon, to a large bowl and mix. 3: Add salmon and coat in the marinade. 4: Let sit for at least 30 minutes. 5: Line a baking sheet with foil and add a wire rack. 6: Place down salmon and cook for 12 minutes. 7: Remove salmon from the oven and brush remaining marinade over the top. 8: Broil for an additional 3-5 minutes until desired crispiness. 9: In a blender, add chicken broth, onion, garlic, jalapeño, poblano pepper, cilantro, lime juice, and cumin. 10: Blend until smooth. 11: In a saucepan over medium heat, add olive oil. 12: Pour in the blender mixture. 13: Mix in rice and salt. 14: Bring rice to a boil, mixing occasionally until almost all liquid has been absorbed. 15: Turn heat to the lowest setting and cover for 20 minutes. 16: Once rice is fully cooked, mix in chopped cilantro and butter.View original recipe
