Instructions
1: Preheat oven to 375°F and line a baking sheet with parchment paper. 2: Slice pita triangles and drizzle with olive oil. Add salt and pepper, then mix until evenly coated. 3: Drain and rinse garbanzo beans, pat dry, and toss with olive oil, onion powder, and salt and pepper on a foil-lined baking sheet. 4: Place both baking sheets in the oven and bake for 10 minutes, mixing each halfway through. 5: Slice chicken breasts in half horizontally and pound to make thin slices. 6: Combine marinade ingredients in a bowl and whisk together. Reserve 1/4 cup for basting chicken. 7: Add chicken to a ziplock bag, add marinade, and massage the bag. Let sit for 30 minutes. 8: In a skillet over medium high heat, cook chicken for 3-4 minutes on each side until reaching 165°F. Baste with reserved marinade halfway through. 9: Cut chicken into cubes and slice toppings and garnishes. 10: Assemble the dish with pita chips, garbanzo beans, hummus, Tzatziki dip, cucumber, banana peppers, olives, and chicken.
