tsp allspice
cup lime juice

tsp ground nutmeg

red bell pepper
tsp salt

bay leaf
cup pineapple

tsp black pepper

cup water

tbsp fresh thyme

tsp kosher salt

cup orange juice

habanero pepper
tbsp brown sugar

tsp cinnamon

oz coconut milk
cup apple cider vinegar

cup soy sauce

lime zest

cup olive oil

bunch scallion

jalapeno
lb extra large shrimp

tsp ginger powder

fl oz avocado oil

cup jasmine rice
Instructions
1: Rinse the rice in water until clear, then drain. 2: Combine rice, coconut milk, water, and salt in a pot. Add bay leaf and olive oil. 3: Stir until the water is absorbed. Cover and simmer on low for 15-20 minutes. 4: Blend all marinade ingredients in a food processor until incorporated. 5: Cover shrimp with 3/4 of the marinade and refrigerate for 2 hours. 6: Soak wooden skewers in water. 7: Thread shrimp, red bell pepper, and pineapple onto skewers. 8: Heat skillet over medium-high and spray with avocado oil. 9: Cook kebabs for 3 minutes on each side. 10: Serve with coconut rice, topping with remaining marinade and scallions.View original recipe
