What you need

cup dry white wine

Instructions
1: Remove lobster meat from shells and put shells in a pot with vegetable stock. 2: Bring to a boil and simmer for about 15 minutes. 3: Steam lobster meat in a basket over boiling water for 5-6 minutes until it reaches 145°F. 4: In a pot, add olive oil and butter over medium-high heat. 5: Once melted, add carrots, leeks, celery, and onion; season with salt and pepper and sauté for 6-8 minutes. 6: Add minced garlic, thyme, oregano, and tarragon; sauté for an additional 2 minutes. 7: Add tomato paste and mix for about 2 minutes until vegetables are coated. 8: Add flour and mix for another 2-3 minutes until thickened. 9: Add wine, scrape the bottom, and simmer until reduced by half. 10: Add lobster stock and stir until combined; simmer for 25-30 minutes. 11: Remove from heat, add basil, and blend until smooth. 12: Stir in heavy cream and season with salt and pepper to taste. 13: Top with lobster meat and enjoy.View original recipe
