What you need

tsp cajun seasoning

fl oz frying oil

tbsp butter

pinch salt

onion

bunch fresh chives

oz lobster tail

Instructions
1: Thinly slice potatoes using a mandoline and place in ice water for a few minutes to release starch. 2: Remove from water, pat dry, and flash fry at 350°F for 4 minutes. 3: Increase heat to 375°F and fry again for an additional 4 minutes. Drain. 4: Combine fried potatoes in a bowl with Cajun seasoning and toss. 5: Add water to a medium pan to a height of about 2 inches and bring to a boil. 6: Place a steamer insert over the boiling water and add lobster tails. Cover and cook for 8 minutes until shells are bright red. 7: In a pan, melt 1 Tbsp of butter over medium-high heat and toast the buns, then set aside. 8: In the same pan, melt 3 Tbsp of butter and add onion, celery, garlic, salt, and Cajun seasoning. Cook until vegetables are tender and translucent. 9: Cut the lobster and add it to the pan, mixing with the vegetables. 10: Place buns on plates and add generous scoops of lobster and vegetables.
