Instructions
1: Add about 2 inches of water to a medium sized pan and bring to a boil. 2: Add a steamer insert to the pot so it is just above the water. 3: Add lobster tails to the steamer and cover the pan. Cook for 8 minutes until outside shells are bright red. 4: Add 1 Tbsp butter to a pan over medium high heat. Once butter is melted, toast buns then set aside. 5: Add 3 Tbsp butter to the same pan and let melt. 6: Add onion, celery, garlic, salt, and cajun seasoning. Cook until vegetables become tender and translucent. 7: Cut lobster, add to the pan, and mix. 8: Place buns on a plate and add generous scoops of lobster and vegetables. Top with chives. 9: For potato chips, with a mandoline, thinly slice potatoes. 10: Place potatoes in ice cold water for 30 minutes to release some of the starch and to keep them firm. 11: Remove from water and pat dry. 12: Flash fry at 350°F for 4 minutes. 13: Remove and increase heat to 375°F. Fry again for an additional 4 minutes. 14: Remove and drain. Place in a bowl with Cajun seasoning and toss.View original recipe
