What you need

tbsp lemon juice

pinch yellow bell pepper

bunch fresh thyme

can tuna

can chickpea

Instructions
1. Drain and rinse the chickpeas, then blend them into a smooth hummus using a food processor. 2. Dice the cucumber, yellow bell pepper, red onion, and cherry tomatoes. 3. In a bowl, combine the diced vegetables with parsley and thyme. 4. In a small bowl, whisk together olive oil, minced garlic, salt, pepper, mustard, and lemon juice to make the dressing. 5. Add the dressing to the vegetable mixture and toss well to combine. 6. Spread the hummus onto a serving platter. 7. Top the hummus with the dressed vegetable salad. 8. Add chunks of canned tuna on top of the salad.
