
Pan Seared Salmon with Mint Pea Risotto

What you need

salmon

tbsp olive oil

tbsp lemon juice
cup chicken stock
tsp salt
cup grated parmesan cheese
cup vegetable stock

pepper
bunch mint leaves

cup peas
cup arborio rice

clove garlic clove

shallot

oz feta
tsp salt & pepper
Instructions
1: Combine all ingredients for the pea puree in a food processor. Process until smooth and set aside. 2: In a saucepan, add vegetable broth and simmer over low heat until ready to use. 3: In a wide pan, add olive oil over medium heat. 4: Add garlic and shallots. Sauté for 2-3 minutes until fragrant. 5: Add rice and mix until it becomes translucent, about 3-4 minutes. 6: Keep heat on medium and add 1 cup of the vegetable stock and stir until it's almost all absorbed. 7: When almost absorbed, keep adding 1 cup of the stock until the rice is soft and the mixture is creamy and thick. This should take about 20 minutes. 8: Add salt and pepper to taste, then add 2 cups of green peas and stir for 2 minutes. 9: Add cheese, mix, and serve with the salmon. Enjoy!View original recipe
