What you need

cup fresh basil leaves

red onion

mozzarella balls

fl oz avocado oil

cucumber

chicken

head romaine lettuce

splash lemon juice

tsp kosher salt

tsp ground black pepper

hass avocado
fresh tomatoes

clove garlic clove

tbsp pine nut

cup parmesan cheese
Instructions
1: Toast pine nuts in a small pan over medium heat. 2: In a food processor, add basil leaves, olive oil, Parmesan cheese, pine nuts, garlic cloves, salt, pepper, and lemon juice. Mix until well combined to create the pesto sauce. 3: Cut the cucumber, red onion, tomatoes, and avocado into cubes. 4: Slice the lettuce. 5: In a bowl, add the lettuce and vegetables. Top with mozzarella balls. 6: Season and cook chicken on medium high heat until the internal temperature reaches 165°. 7: Slice the chicken into cubes and place on top of the salad. 8: Drizzle pesto sauce and mix the salad.
