What you need

fl oz mayo

cup extra-virgin olive oil

tsp black pepper

red onion

fl oz pesto sauce

slice sourdough bread

slice mozzarella cheese

cup fresh basil leaves

slice avocado

slice roma tomato

clove garlic clove

oz cooked shredded chicken breast

tbsp pine nut

cup parmesan cheese
Instructions
1: In a pan over medium-low heat, toast pine nuts until slightly brown. 2: In a food processor, combine basil leaves, garlic, pine nuts, olive oil, Parmesan cheese, salt, and pepper. Process until finely chopped and smooth. 3: Spread the pesto on the inside of each slice of bread. 4: Assemble the sandwich by layering mozzarella cheese, red onion, tomatoes, shredded chicken, and avocado. 5: Spread mayo on the outside of one slice of bread. 6: Cook the sandwich in a pan or on a griddle, putting the side with mayo down first. 7: Cook on both sides until golden brown and enjoy!View original recipe
