What you need

tsp garlic powder

splash lemon juice

tsp kosher salt

chicken breast

cup extra-virgin olive oil
cup fresh basil leaves

bunch arugula

tsp pepper

cup pesto sauce
tbsp mayonnaise

tomato

tbsp olive oil

tsp ground black pepper

clove garlic clove

tbsp pine nut

sourdough bread

cup parmesan cheese
slice provolone
Instructions
1: Combine all ingredients for pesto, except mayonnaise, in a food processor and process until smooth. 2: Pour pesto into a bowl and add mayonnaise. Mix until incorporated and set aside. 3: Cut chicken breast in half lengthwise and flatten. Rub with olive oil, season with salt, pepper, and garlic powder. 4: In a skillet over medium high heat, cook chicken for 4-5 minutes on each side until it reaches 165°F. 5: Cut the loaf of bread lengthwise, spread olive oil on inside pieces, and toast until crispy. 6: Assemble sandwich by spreading a layer of pesto sauce, adding tomatoes, chicken, and cheese slices. 7: Place in a pan under the broiler for about 1 minute to melt cheese. 8: Remove and top with arugula, onions, and avocado.
