tsp smoked paprika

yellow onion

bunch fresh thyme

cup heavy cream

tsp pepper

yukon gold

cup shredded cheddar

cup gruyere
Instructions
1: Thinly slice the potatoes and layer them in a 9x7 baking dish. 2: Chop the onion and spread it evenly across the potatoes and crevices. 3: In a small pan, add heavy cream, garlic cloves, shallots, paprika, pepper, salt, and thyme. Let simmer until fragrant (about 5 minutes). 4: Add 1 cup of shredded Gruyère cheese and 1 cup of cheddar cheese to the mixture. Once the cheese is fully melted, pour enough mixture to cover the potatoes completely. 5: Cover with foil and bake at 350°F for 45 minutes. 6: Remove from the oven and add the remaining Gruyère and cheddar cheese. 7: Bake uncovered for an additional 35 minutes.View original recipe
