What you need

Instructions
1: In a pot over medium heat, add butter. Once melted, sauté onions and garlic. 2: Add flour and mix until it becomes a thick paste. 3: Add chicken broth and whisk until the sauce thickens, about 6 minutes. 4: Once thickened, remove from heat and add cheese. Mix until smooth. 5: Add green chile, salt, pepper, cayenne pepper, and heavy cream. Mix until well combined. 6: Preheat oven to 325°F. 7: Mix together seasonings in a small bowl; reserve 1/4 of them. 8: Cut beef into chunks, season all sides, and set aside. 9: In a Dutch oven over medium-high heat, add 1 Tbsp neutral oil and sear beef on all sides. 10: In the same pot, add tomato paste and cook for about 2 minutes. 11: Add onions, chicken broth, and BBQ sauce; mix well. 12: Add the remaining 1/4 of the seasonings and garlic cloves; mix. 13: Add beef back into the pot, cover, and place in the preheated oven for 3 hours and 30 minutes. 14: Remove beef and shred in a sheet pan, then broil for about 2-3 minutes until slightly crispy. 15: On a plate or tray, add layers of tortilla chips and nacho cheese. 16: On the final layer, add shredded beef, scallions, cilantro, and jalapeño; drizzle with BBQ sauce.View original recipe
