
Rack of Ribs

A delicious rack of ribs seasoned with a blend of spices and served with a charred corn salad. The ribs are marinated and baked to perfection, then broiled with BBQ sauce for that extra touch.

What you need
tbsp vegetable oil

tbsp sour cream

cup cilantro

tsp salt

dash cayenne pepper

tbsp garlic powder

tbsp brown sugar

fl oz bbq sauce

can corn

tbsp onion powder

tbsp smoked paprika

tbsp lime juice

tsp chili powder

tbsp mayonnaise

tsp black pepper

tbsp queso fresco
Instructions
1: Remove membrane from ribs and season with everything except for BBQ sauce. 2: Cover with foil and let marinate in the fridge for 2 hours. 3: Preheat oven to 275°. 4: Line a baking pan with foil and place a baking rack on top. 5: Place covered ribs on rack and bake in oven for 2 hours. 6: While ribs are cooking, make the corn. In a cast iron skillet add 1 Tsp vegetable oil and corn. 7: Cook until corn is slightly charred. 8: In a bowl combine mayonnaise, sour cream, seasonings, cilantro, and lime juice. Add the cooked corn. 9: Next add queso fresco and mix. 10: Remove ribs and brush with BBQ sauce. 11: Uncover ribs and place back into the oven. Broil for 8-10 minutes. 12: Top with additional BBQ, if desired, and serve with corn.View original recipe
