cup vegetable stock

tbsp lemon juice

cup arborio rice

tbsp olive oil
cup chicken stock

shallot

Instructions
1: Combine all ingredients for the pea puree in a food processor and process until smooth. Set aside. 2: In a saucepan, add vegetable broth and simmer over low heat until ready to use. 3: In a wide pan, add olive oil over medium heat. Add garlic and shallots, and sauté for 2-3 minutes until fragrant. 4: Add Arborio rice to the pan and mix until it becomes translucent, about 3-4 minutes. 5: Keep heat on medium and add 1 cup of the vegetable stock, stirring until it’s almost all absorbed. 6: Continue adding 1 cup of vegetable stock at a time until the rice is soft and the mixture is creamy and thick, which should take about 20 minutes. 7: Season with salt and pepper to taste, then add 2 cups of green peas and stir for 2 minutes. 8: Add grated Parmesan cheese, mix well, and serve with the pea puree and pan-seared salmon.View original recipe
