What you need

mango

red bell pepper

fl oz avocado oil
cup mayonnaise
cup chicken stock

lime
tsp salt

bay leaf

bunch cilantro
fl oz lime juice

cup basmati rice

Instructions
1: Combine mangos, bell pepper, onion, jalepano, cilantro, salt, pepper, and lime juice in a bowl. Mix together and place in the fridge. 2: Using a blender or food processor, create the sauce by combining all of the ingredients. Mix until well combined. 3: In a pot over medium heat, add rice ingredients and let the rice get to a gentle boil. Keep stirring occasionally until most of the water is absorbed by the rice. 4: Once the water is mostly absorbed, quickly turn the heat down to a low simmer and cover the pot. Let cook for an additional 15-20 minutes. 5: Season scallops with salt and pepper. Add avocado oil to a pan over medium high heat. 6: Cook scallops for 2 minutes, then flip over and cook for an additional minute. 7: Place rice and mango salsa on a plate.
