Instructions
1: Create the guacamole by combining avocado, chopped tomato, onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Set aside. 2: Season shrimp with Old Bay seasoning, smoked paprika, garlic powder, and onion powder. 3: Cook shrimp in a pan with olive oil over medium heat until shrimp is pink. 4: Cook plant based sausage according to package directions. 5: Fill a deep pan halfway with canola oil. Heat to 350°F. 6: Cut the plantain into 8 slices. Place plantain pieces in the oil and cook for 4-5 minutes. 7: Remove plantains and smash them using a small cup, then dip flattened plantains in a bowl with salt and water. 8: Place plantains back into the oil for another 4-5 minutes, remove, and sprinkle with flaky salt. 9: Assemble the dish by adding guacamole to the plantains, followed by shrimp and sausage.
