What you need

cup pineapple juice

tsp garlic powder

tsp ground ginger

yellow bell pepper

cup barbecue sauce
tsp cornstarch

red bell pepper

tsp salt
bay leaf

cup water

tsp pepper

lb shrimp

oz coconut milk

tbsp rice vinegar

tbsp soy sauce

yellow onion

bunch scallion

clove garlic clove

can pineapple

cup jasmine rice
Instructions
1: Rinse rice in water until the water runs pretty clear, then drain the water. 2: Add rice, coconut milk, water, and salt into a small pot or large saucepan over medium-high heat. 3: Add a bay leaf (optional). 4: Stir until most of the water is absorbed by the rice, cover, and simmer on low for about 15 to 20 minutes. 5: Heat olive oil in a large skillet over medium-high heat. 6: Season shrimp with salt and pepper, garlic powder, and cornstarch, then add to the skillet. 7: Cook shrimp and remove from the pan. 8: Add in bell peppers and onions and sauté for 3-5 minutes until tender. 9: Add the sauce to the pan, and bring to a simmer, adding cornstarch and mixing. 10: Add the shrimp back in and the pineapple, and cook on medium-low heat, letting the sauce reduce. 11: Cook until sauce is thick, sticky, and glossy. 12: Serve over rice and enjoy!View original recipe
