What you need

tbsp vinegar

salt

bacon

tsp lemon juice

avocado

tsp cayenne pepper

tbsp unsalted butter
Instructions
1: Add 4 egg yolks in a bowl over a double boiler, whisk until fully combined. 2: While whisking, add 2 tablespoons of butter at a time until all butter is fully combined with egg yolks. 3: Add lemon juice, salt to taste, and cayenne pepper. 4: Whisk until sauce slightly thickens; it is ready when it can coat the back of a spoon. 5: Remove the sauce from the double boiler quickly so it does not break. 6: In the same pot that was used as the boiler for the sauce, add vinegar and salt and poach eggs for about 3-4 minutes using your desired method. 7: Add toppings such as onions, tomatoes, bacon, avocado, and the hollandaise sauce to the toasted sourdough bread and enjoy!View original recipe
