Instructions
1: Fill a pot with water and bring to a boil. 2: Salt the water and cook pasta until al dente. 3: In another pan, add a tablespoon of olive oil and cook pancetta until crispy (about 5 minutes). 4: Once pancetta is cooked, remove from pan and add in garlic and red pepper flakes. Cook until fragrant (about 3-4 minutes). 5: In a bowl, add eggs, salt, pepper, and cheese. Mix until smooth and consistent. 6: Reserve about 1/4 cup of water from the pasta pan. Slowly pour into sauce mixture, do not add all the water at once. 7: Drain pasta and add it to the garlic mixture on the stove, add about 1/4 cup of your pasta water and mix. 8: Cut the heat and slowly pour the sauce into pasta while mixing. 9: Add parsley and pancetta and mix. 10: Serve with Parmesan cheese and enjoy!View original recipe
