Instructions
1: Add all marinade ingredients to a bowl and mix. 2: Coat chicken in the marinade and refrigerate for an hour. 3: In a skillet over medium-high heat, cook chicken for 4-5 minutes on each side until the internal temperature reaches 165°F. 4: In a pot, add olive oil, basmati rice, and water over medium-high heat. 5: Add salt and bay leaf. 6: Let come to a boil and mix until most of the water is absorbed. 7: Cover the rice and simmer on low for about 15-20 minutes. 8: Once rice is cooked, add cilantro and lime juice, and serve with chicken and vegetables.View original recipe
