Instructions
1: Season the filet steak with salt, pepper, and garlic powder. 2: Cook the steak to your desired doneness, for medium sous vide at 133° for 1.5 hours. 3: Sear the steak over medium-high heat on each side and baste with butter. 4: For the mashed potatoes, in a small pot add crushed garlic, heavy cream, and milk, and simmer on low heat for about 10 minutes. 5: Remove garlic from the mixture using a strainer. 6: Boil the Yukon potatoes in salted water until tender. 7: Mash the boiled potatoes in a bowl, add butter and mix until fully combined. 8: Slowly add the milk mixture into the mashed potatoes until the desired creamy consistency is achieved. 9: Add chopped chives and season with salt and pepper to taste. 10: For the lobster tails, mix melted unsalted butter, smoked paprika, lemon pepper, Cajun seasoning, salt, pepper, garlic powder, onion powder, parsley, lemon juice, and zest. 11: Spread the mixture over the lobster tails, reserving 1/3 for topping later. 12: Broil the lobster tails on high heat for 4 minutes.View original recipe
