Instructions
1: Preheat oven to 425°F. 2: Chop tomatoes and bell pepper into fourths. 3: Drizzle with olive oil and place on a baking sheet and bake in the oven for 30 minutes. 4: In a pot, add olive oil and onions, and sauté for 5 minutes. 5: Add garlic, thyme, and basil, and sauté for an additional 3 minutes. 6: Add chicken broth and roasted vegetables, mash, and stir for about 8 minutes. 7: Season with salt, pepper, oregano, and onion powder. 8: Add in heavy cream and let simmer for about 8 minutes. 9: Mix until fully incorporated. 10: Put mixture in a blender and blend until a creamy consistency is reached. 11: For the grilled cheese, take two slices of bread and coat one side of each slice with the garlic compound. 12: Add two slices of cheese and finely grated sharp cheddar cheese. 13: Enjoy!View original recipe
