Delicious waffle sandwiches made with crispy waffles, savory bacon, and perfectly cooked eggs, topped with a rich hollandaise sauce and served with avocado.

What you need

tsp cayenne pepper

tsp lemon juice

tbsp sugar

fl oz maple syrup

cup ap flour

tsp salt

tsp baking powder

tsp kosher salt

tsp baking soda

tsp vanilla extract

cup buttermilk

bunch fresh chives
Instructions
1: In a bowl, combine dry ingredients and whisk together. Set aside. 2: In a separate bowl, combine wet ingredients and whisk together. 3: Add the buttermilk mixture to the dry ingredients and mix with a spatula, don't over mix. 4: Add egg whites and mix until just combined. Let sit for 15-30 minutes. 5: Grease both sides of your waffle iron and pour 1 cup of batter into it. Evenly spread the batter, add a dash of maple syrup, and cook. 6: Remove cooked waffles and set aside. 7: In a bowl over a double boiler, add 4 egg yolks and whisk until fully combined. While whisking, add 2 Tbsp of butter at a time until fully combined. Add lemon juice, salt, and cayenne pepper. Whisk until sauce slightly thickens. 8: Cook bacon according to package directions. 9: Slice the avocado. 10: Cook eggs using your desired method. 11: Create your waffle sandwiches by placing down a quarter piece of waffle, 1 piece of bacon cut in half, another waffle quarter, and an egg. 12: Top with hollandaise sauce and chives.
