What you need

tsp avocado oil

tbsp brown sugar

tsp sesame oil

tbsp light soy sauce

tsp rice vinegar

udon noodles

cup dark soy sauce

tbsp oyster sauce

cup mushroom
chicken breast

cup white onion

cup carrot

bunch scallion greens
Instructions
1: In a bowl, mix all sauce ingredients together and set aside. 2: Cook udon according to package directions and set aside. 3: In a wok on medium high heat, add 2 tsp of avocado oil. Add chicken and cook almost all the way through. Add 2 Tbsp of the sauce and sauté for an additional 2 minutes until fully cooked. Remove from the pan and set aside. 4: Add another tsp of avocado oil and add all vegetables except for the broccoli and green onions. Cook, mixing for about 4 minutes until the vegetables are lightly charred. 5: Add in broccolini and green onions and cook for an additional 2 minutes. 6: Add udon noodles, chicken, and remaining sauce.
