What you need

red bell pepper

tbsp avocado oil

tbsp dark soy sauce
tsp cornstarch

cup unsalted peanuts

tbsp oyster sauce

tsp white pepper

tbsp water

tsp mirin

celery stalk

tsp ginger

tbsp rice wine vinegar

tbsp light soy sauce

tsp sesame oil

dried chili peppers
box Stir Fry Noodles

lb chicken thigh

pinch kosher salt

tsp sugar

Instructions
1. Add chicken to a bowl with all marinade ingredients. Mix until chicken is completely coated. Set aside until it’s time to cook. 2. Add all sauce ingredients to a small bowl and whisk until fully combined. Set aside until it’s time to use. 3. In a large wok over medium high heat, add 2 tablespoons avocado oil. Add chicken and cook for 3 minutes on each side. Remove and set aside. 4. Add another tablespoon of oil over medium heat. Add garlic, dried chili peppers, ginger, and white parts of the scallions. Sauté for 2 minutes, until fragrant. 5. Mix in bell pepper, celery, and peanuts. Cook until vegetables are softened, about 2 minutes. 6. Add chicken back in along with noodles and green parts of the scallions. Pour in the sauce and toss to combine. Enjoy!
