
Mac and Cheese

A classic creamy and cheesy pasta dish featuring a blend of colby Jack, mozzarella, sharp and medium cheddar cheeses with a seasoned roux, baked to perfection with a golden topping.

What you need
oz colby jack

oz sharp cheddar

oz mozzarella cheese

oz cheddar cheese

cup heavy cream

tsp dry mustard

tbsp butter

clove garlic clove

tsp salt

tsp black pepper

tbsp cream cheese

shallot

tsp smoked paprika

tbsp flour

tsp onion powder

cup full fat milk
Instructions
1. Season water with salt and boil macaroni just until Al dente. Drain water and set aside. 2. Combine all shredded cheeses except cream cheese, reserving 2 1/2 cups for topping. 3. Combine all seasonings in a small bowl and mix together. 4. In a large pot over medium heat, add butter. Once melted, add shallot and garlic. Sauté for about 1-2 minutes. 5. Add half the seasonings and mix for an additional 15-30 seconds. 6. Turn heat down to medium low and add flour, whisking to combine. 7. Slowly add milk and heavy cream while whisking until there are no clumps and sauce has thickened, about 10-15 minutes. 8. Turn heat down to low and add cream cheese, whisk until smooth. 9. Add remaining seasonings and mix. Add grated cheese in batches, reserving 2 cups for the top. 10. Taste and adjust with salt and pepper. 11. Add macaroni to a large bowl and pour the cheese sauce over it, mixing until fully coated. 12. Pour mixture into a baking pan and top with remaining shredded cheese. 13. Bake at 375°F until it starts to bubble, about 10-15 minutes, then broil until cheese is slightly browned and bubbly.
