red bell pepper

jalapeno pepper

Instructions
1. Finely dice one green bell pepper, one red bell pepper, and one white onion. 2. Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. 3. Add the diced peppers and onion to the beef. Sauté until softened. 4. Stir in minced garlic and fresh thyme leaves, cooking for another minute until fragrant. Set the beef mixture aside. 5. In a separate pot, heat oil and sauté diced onion and jalapeño until soft. 6. Add frozen peas and corn, and cook for a few minutes. 7. Stir in bouillon powder, then add the rice and toast for one minute. 8. Pour in 4 cups of water, bring to a boil, then reduce heat to low. 9. Add a whole habanero pepper, cover, and simmer until the rice is cooked and water is absorbed. 10. For the sauce, heat oil in the now-empty skillet. Sauté sliced onion, green pepper, and red pepper until they start to soften. 11. Add minced garlic and cook until fragrant. 12. Stir in tomato paste and cook for one minute, then deglaze with 1 cup of water to create a sauce. 13. Simmer the sauce until it thickens slightly and the vegetables are tender-crisp. 14. To assemble, place a serving of rice in a bowl. Top with the ground beef mixture, and finish with a generous spoonful of the vegetable sauce. 15. Garnish with fresh chopped parsley before serving.
